“I suppose this is very similar to Chicken parmigiana, but I have renamed it because it was so quick, easy, and delicious. I added a handful of black olives which gave it a nice twist.”

Ingredients Nutrition


  1. Preheat oven to 200C or 180C fan forced.
  2. Lightly grease a 6-cup capacity baking dish.
  3. Combine breadcrumbs and herbs.
  4. Toss chicken in flour, shaking off any excess.
  5. Dip in egg and breadcrumbs, pressing to coat.
  6. Heat oil in large frying pan on medium heat, cook chicken in batches for 1-2 minutes each side, till browned all over.
  7. Pour 3/4 cup pasta sauce into the base of prepared dish.
  8. Top with half the chicken 1 cup of pasta sauce and half the parmesan, then remaining chicken, pasta sauce and parmesan.
  9. scatter black olives if using, and mozarella.
  10. Season and bake for 30mins until cheese is bubbling and golden.
  11. Serve with salad.
