  • 2 corn tortillas
  • 2 tablespoons low-fat Mexican cheese blend
  • 13 cup egg white
  • 2 tablespoons salsa
  • 14 cup avocado
  • cooking spray

directions

  • Spray small skillet with cooking spray. Cook egg whites and salsa until firm. (drain excess liquid over sink).
  • Place eggs on one tortilla and sprinkle with cheese. Spread mashed avocado on other tortilla and place on top of eggs/cheese side.
  • Heat small skillet with cooking spray and cook quesadilla on each side until toasty and browned.
  • Slice in half and enjoy!
