ingredients
- 1⁄2 cup ground flax seeds
- 1⁄2 cup rye flour
- 1⁄2 cup oatmeal
- 1 teaspoon baking powder
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1 egg
- 1⁄4 cup coconut oil
- 1⁄4 cup honey
- 1 ripe banana
directions
- Preheat oven to 350 degrees.
- Mix dry ingredients.
- Add the egg, oil, honey, and banana one by one.
- Bake for 20- 25 minutes.

These muffins came out dense, grainy and super yummy! Perfect for breakfast on the go! YUM!<br/>I really enjoyed the honey taste in these and the nuttiness from the flax seeds. <br/>Due to what I had on hand I used crushed flax instead of ground and applesauce in place of the oil.
