Flax & Friends Muffins

"I developed these to be hearty, healthful, and delicious. The flaxseed is good for you in all sorts of ways. You may cut the sugar out entirely if you like to increase the healthful apsects of the muffin."

  • Preheat oven to 350 degrees.
  • Mix together all dry ingredients, including sugar.
  • Stir in raisins and dried cranberries.
  • Add eggs, applesuace, then milk, stirring just until moistened. Please don't over-mix.
  • Spoon batter into muffin tin, filling each cup 3/4 full.
  • Sprinkle a pinch of chopped walnuts onto top of each muffin.
  • Bake for 20-25 minutes, or until center of muffin top is no longer gooey.

  1. These were very good. I didn't have the vanilla sugar or wheat flour on hand so I just used unbleached flour. Everyone ate these up. A nice healthy and most importantly tasty muffin!
     
  2. What a great muffin. Almost like a bran muffin. Great texture and flavor. I left out the raisins and doubled the cranberries, and subbed pecans for walnuts (I just mixed them in instead of sprinkling on top). Just the right amount of sweetness and cinnamon! Made for Spring 2010 PAC.
