ingredients
- 1 cup whole wheat flour
- 1 cup unbleached flour
- 3⁄4 cup flax seed meal
- 3⁄4 cup unsalted sunflower seeds
- 1 teaspoon vanilla
- 1 egg
- 2 tablespoons prunes, pureed
- 1 teaspoon salt
- 1 teaspoon vinegar
- 3 teaspoons baking powder
- 1 apple (peeled)
- 1 cup apple juice
- 3 tablespoons molasses
directions
- Mix only until just incorporated. Peel and cut apple into 12 slices one for each muffin, slip one piece in each muffin sprinkle with cinnamon and bake at 350 for 20 minutes.

FYI: From what I understand (from reading comments on this site and from other health sites) you need to grind up the flax seeds to get all the wonderful omega-6 benefits from them. If you leave them whole they will just pass through you and provide fiber only. Thought you'd like to know since you are specifically using them for health benefits.
