Flax Seed Raisin Bread in Bread Maker

"This is one of the best flax seed breads I have ever tasted. The texture is really light and very moist. It is just the right sweetness and the sunflower seeds add the little extra taste. I got the recipe while reading up about flax seed on the internet."

  • Put in bread machine in order given except add raisins later.
  • I don't bake my bread in the machine--I set it on dough.
  • Take out of bread machine and let rise 30 minutes.
  • Bake at 350° for 30 minutes.

  1. Light soft bread with excellent crumb - perfect for slicing & awesome toasted! I used 1/2 cup ground flax (an oops) & 1/2 cup more of ww flour (King Arthur's white ww) so upped the H2O by about a 1/3 -1/2 cup. Used 2 big T flax seed instead of sunflower seeds. Did add 2T vital wheat gluten (I am soo hoping this is not the same stuff from China that croaked the dogs who ate it) to keep it frsh a day or two longer. This dough rose enormously! I used raisin option (it beeps to let me know when to add raisins so they don't over mix) & added about 1/3 cup of cinnamon dusted raisins. Once the dough cycle was completed I rolled dough out & covered with about a cup of heavily cinnamon dusted raisins & 1/4 cup of brown sugar. I rolled this up & divided into two loaves I shaped to fit into bread pans greased & dusted with bran. I let them rise several hours in a 64 degree room & then baked 35 minutes at 350 degrees F. Wonderful bread! What a treat for breakfast, for PB&J sandwiches, for turkey salad sandwiches! Will be my "go-to" recipe for cinnamon bread! Am planning to make again w/o raisins or cinnamon & maybe a bit less sugar just to see what I get. Thank you DotM for a great bread recipe!
     
  2. I did the whole thing in the bread maker. Used 1/2 tsp less salt and no sunflower seeds since I didn't have any. Turned out slightly heavy and chewy for me but very very soft! Crust was excellent and sliced very easily!
     
  3. very nice. light and fluffy. To get more whole meal, i put 1 1/4 c unbleached bread flour and 2 1/2 c high protein whole wheat. i didn't have flaxseed, so didnt put in. instead, i added pumkin seeds. turns out heavenly. thank you dotm
     
  4. Very good recipe, DotM! The texture was perfect. We did tweak the recipe a bit. We added 1/4c more flaxseed and decreased the bread flour by 1/4c. We also used skim milk instead of water for the extra calcium. We might decrease the salt a little the next time...I thought I could taste it in the background. We did not add the raisins since my husband wanted to use the bread for sandwiches and we ended up baking it in the bread machine instead of the oven. Thanks, DotM! M&Mers
     
  5. This bread turned out excellent. I added a cup of golden raisins and 2 tsp. of cinnamon. Like DotM, I used my bread machine on dough setting, then baked it in the oven.It turned out high and light We have been trying to get more flax seed in our diet and this is an easy, delicious way.Thank you, Patric

I'm a farm girl from Ontario, now living in Newfoundland for 27 years and love it. Lots of fresh air and a beautiful view of the water. Space to enjoy all my flower beds, and friendly people.
