Flaxseed Wraps

"This comes from a book by William David, MD, "Wheat Belly". Dr. Martin believes that wheat is bad for far more people than we think. Further, some of the common substitutes for gluten-flours, such as potato starch or tapioca starch, are equally bad. I have to wait for the book to come off the new book display, but in the meantime I copied this recipe, which sounds good, The wraps can be stored for several days in the fridge, wrapped in plastic."

  • Mix the dry ingredients in a small bowl.
  • Stir in the coconut oil.
  • Beat in the egg and water.
  • Grease a microwave safe glass or plastic pie plate with coconut oil. Pour in the batter and spread it evenly.
  • Microwave on high for 2 to 3 minutes. Let cool 5 minutes,.
  • Remove carefully with a spatula.
  • Turn over and fill as desired.

  1. Good consistency, but somewhat tasteless and dry. Adding a bit more salt and Virtue sweetener helped. Also, I spread the batter thinly in a circular shape on parchment paper and nuked it for 2 minutes. It came out perfectly without having to grease a glass dish.
     
  2. This recipe is so quick and easy! It was yummy with buffalo chicken, chipotle ranch, avocado, red onion and some cheese! I feel this wrap could be so versatile. I cooked mine for 2.5 and it was perfect! Some wraps don’t hold up well but this one did!

My screen name is a diminutive in Lithuanian for bread, so you won't be suprised to learn that I love to bake bread. In recent years I have been baking a lot of sourdough breads and have several starters sitting in my refrigerator. But I like to cook a lot of other things, as well, especially from various cultures. The cat wishes I would concentrate on meat and fish... I joined a few years ago but started posting recipes and participating in forums just recently - I wish I had done so earlier.
