Florida Salad

"This was a popular side salad at a favorite dinner spot in Florida. We copied the idea when we got back to the great white north. Do not omit any of the ingredients...they really work well together. We serve this often at home when we are stuck on a "side" dish."

  1. This is a keeper! We had this for our lunch and it was very good and very filling. The only thing I changed was feta cheese for blue cheese, because my husband hates blue cheese. Thanks so much for a great recipe! Carole in Orlando

  2. Great salad combination! I love olives in my salads. I used spring mix greens and torn romaine lettuce. I made my own quick Dijon vinaigrette fro the dressing, but a bottled vinaigrette would work as well. I chose the blue cheese over the parmesan. It went well with the other ingredients, but the parmesan would be great, too. I may use both next time. Thanx!

I love to cook and have a pretty captive audience with my father and my co-workers. If I had a month off with no work and no responsibilities I would love to take a cooks tour of europe. There is nothing better than learning simple meals from people who love what they do!
