Floridanative's Cajun Black Beans and Rice

- 3⁄4 lb grass-fed ground beef
- 1 large white onion, fine dice
- 1 medium green bell pepper, fine dice
- 2 -3 stalks celery, fine dice
- 1 cup chicken broth (or vegetable broth, as desired)
- 2 (15 ounce) cans organic black beans, rinsed and drained
- 2 cups prepared brown basmati rice
- 1 -2 tablespoon cajun seasoning (I use Kittencal's recipe The Best Creole/Cajun Seasoning Mix)

- black pepper
directions
- Brown ground beef until no longer pink.
- On medium heat, add onions, peppers and celery to beef, and cook until onion is soft and translucent.
- Add chicken broth, black beans and rice.
- Stir to mix well and add the cajun seasoning, and salt and pepper to taste.
- Simmer on low about 15 minutes or until most of the liquid is absorbed or cooked off.
- Serve with a green salad.
