Floridanative's Cajun Black Beans and Rice

"Just a little something I threw together one night for dinner when I didn't want to put a lot of effort into it! This came out really good, and could be made with or without the meat; just cut the broth by half if not using the beef. Serve as a one-pot main dish, or as a side dish with grilled or roasted meats. I made it with black beans, but I'm sure red beans would be good as well. Either way, this is good old 'stick to your ribs' comfort food in my book. NOTE: I pre-cook my rice and freeze it, so having prepared rice on hand is a time-saver."

  • Brown ground beef until no longer pink.
  • On medium heat, add onions, peppers and celery to beef, and cook until onion is soft and translucent.
  • Add chicken broth, black beans and rice.
  • Stir to mix well and add the cajun seasoning, and salt and pepper to taste.
  • Simmer on low about 15 minutes or until most of the liquid is absorbed or cooked off.
  • Serve with a green salad.
