Fluffy Cottage Cheese Pancakes

"Not liking cottage cheese yet wanting the additional protein brought me to this recipe. These are lovely, fluffy, non-cottagey tasting pancakes. It's been in my family for a long time. Enjoy!"

  • Mix all ingredients together in large bowl.
  • There is no need to overmix this batter as the lumps will disappear when cooked.
  • Drop onto hot griddle or pan to make pancakes.
  • When bubbling on top, turn to complete.
  • Serve immediately with the syrup of your choice and/or dust with confectioner's sugar.

  2. These are excellent! I like the fact there's a little nutrition to these pancakes unlike a lot of other recipes. And I also like being able to throw them together without making a big mess. I cut the servings down to three and it was perfect. The pancakes turned out thick for us but not too thick. I will definitely make these again. Thank you.
     
  3. DH, a toddler, and I all loved these. I agree with the comment from Chef 302486, that they taste like crepes -- it is good to expect that. I didn't have sour cream on hand so I used 1/2 c. light cream cheese and 1/2 c. plain Greek yogurt in its place. DH has asked me to make these regularly! I'll also be sending the recipe to a diabetic friend. Thanks! Oct 25, 2007: I had to revise this because this recipe has become such a staple at our house. We now use flavored yogurt a lot instead of the sour cream, with great results. Thank you so much for this!
     
  4. So maybe this is 3.5 stars. I didn't LOVE it...but I came close to loving it...for a pancake. I disagree that this is ANYTHING like a crepe. Flavor-wise or otherwise. I found the batter very thick and difficult to work with (sticky, didn't turn over easily without running out the sides and I sprayed the pan and didn't spray the pan...tried it both ways). And the flavor was a bit tangy and salty for me. I would have liked a bit more sweet. THere were also stringy bits of cheese in the middle which made these look savory and they smelled like an omelet cooking. The taste was okay...they were VERY fluffy for a cottage cheese pancake. I had trouble getting them to cook without overbrowning and getting a consistant and even brown all over the pancakes which made for an uneven presentation. I don't know. I've made two other recipes for pancakes on the Zaar and both were a head above this one. I won't likely make it again but will use the other recpies that are consistant through and through.
     
  5. I've made these for years, got the recipe from an old Adele Davis book....but mine only have cottage cheese, eggs and flour (well, now I use gluten-free pancake mix) I'm going to try adding the sour cream. I love them with cinnamon-applesauce and a drizzle of honey! Mmmmmm
