Fluffy Oven Eggs and Bacon

"I don't even remember where I got this recipe from! I've never made it, but it sounds tasty (anything with bacon is good, right?)."

  • Heat oven to 375 degrees F.
  • Grease 1 1/2-quart round casserole dish.
  • Cut bacon slices into thirds. Cook and stir bacon in 10-inch skillet over medium heat until almost crisp.
  • Add onion. Cook, stirring frequently, until bacon is crisp; drain.
  • Spread bacon and onion in the bottom of the casserole dish.
  • Beat the Bisquick, eggs, milk, salt and pepper with hand beater until almost smooth.
  • Slowly pour egg mixture over bacon and onion; sprinkle with cheese.
  • Bake uncovered until knife inserted in center comes out clean, about 35 minutes.

  1. Tried this yesterday for breakfast. The only thing that didn't turn out was the bisquik in it. After 35 minutes, I checked it and it was cooked, so I took it out and served it up. The eggs, cheese and bacon were fantastic (I used turkey bacon), but the bisquick was like mushy dough. We just ate around it. I think without the bisquick it would have been great. Will try it without next time!
