  1. In a large bowl dissolve gelatin in boiling water.
  2. Drain pineapple well, reserve juice, set pineapple to the side.
  3. Add juice to gelatin and stir well.
  4. Add rice.
  5. Chill until mixture begins to thicken.
  6. Fold in Cool Whip and pineapple.
  7. Chill for at least one hour.
