“Very basic and simple recipe. You can pretty much do whatever you want with the ingredient quantities. There is no wrong way to do this, I am just posting my way so I don't forget. Great alternative to to meat. I usually don't use all of the bean mixture so I save some for burritos later.”

Ingredients Nutrition

  • 1 (16 ounce) canof low fat refried beans
  • 6 ounces of shredded mozzarella cheese
  • 3 tortillas (9 inches)
  • 14 cup warm water
  • 1 teaspoon jalapeno puree (start with this and add more as needed)

Directions

  1. Heat oven to 400 degrees.
  2. Combine water, beans, and jalapeno puree. Taste and add as much puree as needed.
  3. Put a tortilla shell on a glass pie plate. Cover it with some of the bean mixture. How much is really up to you. I eyeball it and I end up using about a third of the mixture.
  4. Layer with half of the cheese.
  5. Repeat.
  6. Put the final tortilla on top and give a bit of a squish.
  7. Put in oven for 10-14 minutes. You should start to watch it at about the 10 minute mark so it doesn't burn. It should be warm in the middle, cheese should be melted and the tortilla crispy on the edge.
