  • Place 1 chicken breast half, 2 sliced tomatoes and 1 sliced zucchini in each packet.
  • Spoon 2 Tablespoons of basil pesto over each chicken.
  • You can use 8 18 x 12 inch sheets of heavy duty foil if you don't want to purchase the foil packets.
  • Make sure you double fold ends by folding 1/2 inch and then repeating the 1/2 inch fold.
  • Remember to leave space on sides for circulation and expansion.
  • Cover and grill packets 4 to 5 inches from medium heat.
  • Cook 20 to 25 minutes or until juice of chicken is no longer pink.
  • To serve, cut a large"X" across top of packet to let steam escape.
  • This also can be cooked in a 375 degree oven for 25 minutes or until juices run clear.

  1. This is my new favorite meal! So easy and healthy too. I substituted plum tomatoes for the Roma, and baked the foil packet at 375 for 25 minutes. It came out perfectly. I also love how easy it is to reduce or increase the servings with this recipe, since each serving uses exactly 1 zucchini and 2 tomatoes...what could be better?
     
  2. I thought this would be just another chicken dish, however, it was tasty, easy and pretty healthy! The only thing I added was to season the chicken breast with salt and pepper before adding the veggies. Thanks!
     
  3. This is such an easy way to cook up chicken and veggies! I followed the directions and thought mine turned out bland though. This could be the fault of the pesto I used and is easily fixed with a little salt or seasoning after cooking. Thanks! I'll definitely try this again.
     
  4. I planned to use the grill but it was nasty over the wknd, so I used the oven method. Cut the recipe in half, b/c just DH & me. My zucchini had gone bad (!!) so I substituted mushrooms, added onions for onion-loving DH, but otherwise followed it as written. The chicken was SOOO moist & flavorful-- and the amount of pesto is perfect and doesn't overpower. Thank you! Will make this again!

I am a mother of three and live in central Pennsylvania. My children were very active in after school activities and found we weren't spending anytime together at meal time. In 1998, I decided to start cooking my dinners in a crockpot so that we could have a home cooked meal together once everyone came home. My children now get so excited to see what we are having to eat and love the smell when they walk in the door. My family calls me the crock pot queen. LOL I use my crock pot everyday of the year. <br> <br>My three children are now in college and before they come home they request their favorite meal. I still continue to cook in the crock pot for my husband and I. It is nice after a long day to know your meal is ready. It also helps in keeping my grocery bill down. With zaar, I can print my shopping list and that is all I purchase is the ingredients on that list. <br> <br>Now, my two daughters have been crock pot cooking while in college. They find it is easy to cook for the themselves and their friends.
