Foil Wrapped Chicken Tacos

"This is quick and easy and oh so yummy for those that want a different take on the usual tacos. I use taco sauce instead of salsa only per preference."

  • Preheat oven to 400 degrees.
  • Sprinkle chicken with seasoning mix.
  • Place 1/2 cup of the potatoes on center of each of 4 large sheets of heavyduty foil.
  • Make sure foil is sprayed with cooking spray to prevent sticking.
  • Top evenly with chicken, salsa, and cheese.
  • Bring foil sides up.
  • Double fold top and both ends to seal packet.
  • Leave room for heat circulation inside.
  • Place on a 10x15 inch baking sheet.
  • Bake 30-35 minutes or until chicken is 165 degrees.
  • Remove packets from oven and let stand 5 minutes.
  • Cut slits in foil to release steam before opening.
  • Serve with sour cream or any other toppings.

  1. This was such a great recipe! We really enjoyed dinner tonight. I added salt and pepper to the chicken breasts (which were thin sliced) before the taco seasoning. Sour cream really put these over the top. A side dish of skillet corn and pinto beans with fresh red peppers accompanied this along with tortilla chips. Thanks CoffeeB!
     
  2. very good:) I cut up the chicken into smaller pieces, didn't peel the potatoes, added the taco seasoning on top of the chicken and potatoes in the foil. I also used more salsa than the recipe called for. Very simple too, not a lot of mess to clean up after! Thanks for the great recipe!
     
  3. Very good! I added some red pepper and an onion. I would also add the cheese at the end and broil it. I used a packet of ElPaso taco powder and avoided salsa.. The result was great and the smell in the house was awesome.
     
  4. I didn't have any taco seasoning so I made my own chili seasoning and it tasted delicious. I also used chipotle salsa. I had extra seasoning so I covered the potatoes as well. Tasted excellent!!! Thanks for posting :)
     
  5. Surprisingly, this had very little flavor for us. I used Taco Bell Taco Sauce (#60254) and we topped with sour cream. The chicken was dry and although the fragrance was good, the flavor was lacking. Maybe adding some onion and bell pepper rings to the packets would help??
