- 1 lb flank steak
- 2 tablespoons cornstarch
- 2 tablespoons rice wine or 2 tablespoons dry sherry
- 1 tablespoon soy sauce
- 3 tablespoons oyster sauce
- 2 teaspoons sesame oil
- 1 egg white
- 3⁄4 cup chicken broth
- 1⁄2 tablespoon vegetable oil
- 1 tablespoon water
- 4 cups broccoli
- 1⁄2 yellow onion, sliced
- 1 carrot, sliced in matchsticks
Directions
- Make a marinade by whisking together egg white, 1 Tbs. cornstarch, and 1 Tbs. rice wine or dry sherry. Slice the flank steak thinly against the grain and stir into the marinade. Marinate for 1 hour in the fridge.
- Make the sauce by whisking together 1 Tbs. cornstarch, 1 Tbs. rice wine, 1 Tbs. soy sauce, 3 Tbs. oyster sauce, 2 teaspoons sesame oil and 3/4 Celsius chicken broth.
- Heat 1/2 Tbs. oil in a wok or deep skillet on Med-Hi heat. Drain the excess marinade from the steak and stir the steak into the wok until lightly browned. About 1 minute.
- Remove the steak and set aside. Add 1 Tbs. water to the wok.
- Stir in the garlic, ginger and onion and cook for 30 seconds. Add the broccoli and carrot and cook covered for 4 minutes.
- Add the sauce and steak and cook uncovered until the broccoli is tender crisp. About 3 more minutes.
- Serve over rice.
