ingredients
- 2 apples, sliced thin, CORES REMOVED
- 1 head romaine lettuce, torn into bite-sized pieces or 6 cups mixed spring greens
- 3 mushrooms, sliced thin (optional)
- 1⁄4 red onion, sliced thin (optional)
- 1⁄2 cucumber, sliced into coins (optional)
- 1⁄2 1/2 cup walnuts or 1/2 cup pecans
- 1⁄2 cup feta cheese or 1/2 cup goat cheese, crumbled
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar
directions
- Slice up all vegetables and tear lettuce into small pieces. Toss together in a large bowl.
- Top with nuts and cheese.
- In a small cup, mix the oil and vinegar.
- Dress the salad JUST before serving by adding 1/2 of the dressing, mixing well, tasting, and adding more if needed.

Based out of Lambton County, we travel to both public and Catholic elementary schools and create healthy recipes with a rainbow of nutritious ingredients in grade 6, 7 and 8 classrooms. Our recipes all meet the Ontario Healthy Schools nutrition guidelines and are created with the skills of our young chefs in mind. </p>
