  1. Core apples and slice them thinly. Get ALL the core bits out. Peel them if you must, but all the nutrients are in there!
  2. Sprinkle apples with lemon juice to stop them browning (from oxygen).
  3. In a large skillet or frying pan, melt butter with oil on medium heat.
  4. Carefully pour the apples in the skillet, and spread out evenly.
  5. Sprinkle brown sugar over the apples.
  6. Cover skillet and cook on medium, stirring occasionally, until apples are soft and the pan is full of juices.
  7. Sprinkle with cinnamon (and optional nutmeg) when they are finished. Cinnamon will soak up all the juices in the pan.
  8. Serve hot over cereal or ice cream, or top with granola.
