  1. Preheat oven to 350.
  2. Mix peanut butter, egg, sugar, and vanilla in a large bowl with a hand mixer until well combined. Stir in chocolate chips or butterscotch chips.
  3. Spoon tablespoon-sized balls of dough onto an ungreased cookie sheet. Do not flatten cookies. Bake for 10 minutes at 350. Transfer to cooling rack.
