“Husband gave me this recipe to make. Made with achiote seeds I found in supermarket and never knew what to do with them. Seeds give oil a really nice flavor and makes a nice yellow rice.”

  1. Heat oil in skillet. Add seeds, and wait until they loose color. Scoop them out.
  2. Add onions and saute until soft and translucent. Add all remaining ingriedients and stir well. When liquid has been absorbed by rice, lower flame and cover until rice is cooked. You can add a can of rinsed beans & or cooked sausage at this point if you'd like.Also ,if you can't find sofrito, you can saute 1/2 small chopped red & 1/2 small chopped green pepper with onion.
