  • 1 (12 ounce) bag corn chips (regular or "scoops")
  • 2 (15 ounce) cans chili with beans (turkey chili is very tasty too!) or (15 ounce) cans chili without beans (turkey chili is very tasty too!)
  • 1 large onion, chopped
  • 3 3 cups colby cheese or 3 cups monterey jack cheese, grated
  • sour cream
  • salsa

directions

  • Start with loaf or casserole dish (I prefer the loaf pan because it doesn't dry out the ingredients).
  • Layer the ingredients as listed. Build 3 or 4 layers, depending upon the pan size.
  • Finish with even more cheese on top.
  • You can add hot sauce or other spices between the layers but DO NOT add salt, as the corn chips have plenty!
  • Cover and bake for 15 to 20 minutes at 350°F.
  • Uncover and bake 5 minutes more to brown cheese on top.
  • Serve promptly with sour cream and salsa on top.
  • Can be made up to 24 hours ahead and stored the the fridge.

  4. Folks this is a truly authentic Texas invention, Frito Lay, Wolf Brand Chili and Kraft (cheese) all headquartered here, so this was a natural. I am here to give you a Texas twist on this. It is never necessary to bake Frito Pie, you can just mix the fritos, HOT chili, cheese and onion for a crunchy version. What we do here is make this directly in the bag, which is found here at fairs, football games, bbq's etc. Take a big grab package, turn it up on the skinny side, and cut a slit right into the long side of the bag. Then put in piping hot chili, onions and cheese, throw in a plastic spoon and go to town. This is great for kids, and it is a great conversation piece for anyone who has never had this or seen food served right in the bag. Then the "bowl" just goes right in the trash. yall enjoy
     
  5. Frito Pie is like the ultimate in Tex-Mex junk food. Great for dinner on a cold night, in front of the tube with a cold gallon of milk (or beer). This is a more "sophisticated" version for those that don't want to just throw everything right into the Frito bag and pig out.
