Freezer Fudge

"I don't know why this is called Fudge - it isn't. However, it is a very tasty frozen treat. Very chocolatey. Two tsp. sugar can be used instead of the Splenda."

  • 12 cup canned unsweetened crushed canned pineapple
  • 13 cup nonfat dry milk powder
  • 2 teaspoons cocoa
  • 2 teaspoons Splenda sugar substitute

  • Combine milk powder, cocoa, and Splenda. Stir in pineapple until well combined. Pour into a custard cup and freeze until firm.

  1. I loved this. No one else in my family was terribly fond of it, but they are not watching what they eat as much as I am! I doubled the recipe but then halved the servings, freezing a double batch in 4 containers. I thought it was fudgy and sweet. A great way to satisfy my sweet tooth. As it turns out I didn't have any crushed pineapple so I just dumped a can of chunks (plus all the juice) in my food processor and whirred it until it was like crushed. Thanks. I'll be making this again and again.
     
  2. Tastes like a fudgesicle. I used canned pears, mashed, but will try it with pineapple. Fast, easy, even the husband likes it. I douibled it for two, but will only eat half of my portion--pretty intense cocoa taste.
