ingredients
- 1 tablespoon olive oil
- 2 tablespoons Dijon mustard
- 4 flour tortillas, 10-inch
- 6 ounces brie cheese, rind removed and at room temperature
- 1 bunch fresh spinach leaves, stems removed

Aioli Dipping sauce
- 1⁄2 cup mayonnaise
- 1 garlic clove, minced
- 1 teaspoon lemon juice
directions
- Spread a thin layer of Dijon mustard on 1 tortilla.
- Spread some Brie on the 2nd tortilla and top with a single layer of fresh spinach leaves.
- Put the 2 tortillas together like a sandwich.
- Heat Olive Oil on medium low in a large frying pan and brown the tortillas on both sides.
- Cut through the tortillas like you would a pizza with a pizza cutter.
- Servie with Aioli dipping sauce.
- For the Aioli dipping sauce: blend all the incredients together with a whisk.

I am happily married for 18 years with 3 teenagers.
