  • Spread a thin layer of Dijon mustard on 1 tortilla.
  • Spread some Brie on the 2nd tortilla and top with a single layer of fresh spinach leaves.
  • Put the 2 tortillas together like a sandwich.
  • Heat Olive Oil on medium low in a large frying pan and brown the tortillas on both sides.
  • Cut through the tortillas like you would a pizza with a pizza cutter.
  • Servie with Aioli dipping sauce.
  • For the Aioli dipping sauce: blend all the incredients together with a whisk.

I am happily married for 18 years with 3 teenagers. I only work part-time because I spend lots of time at home cooking and baking healthy meals for my family including my grand-mother's homemade bread recipe. I make it the old fashioned way (with a bit of elbow grease) rather than a bread maker. The recipe makes 5 loaves and lasts me about a week. My family loves coming home on a bread making day - the house smells so yummy. I try to buy organic ingredients as much as possible. I stay away from all artificial sweeteners and low-fat items. My motto is to have a nice snack of 2 wonderful tasting high fat cookies than eating half a box of low fat tasteless cookies. My passion besides baking is homeopathy. I keep my family healthy with homepathic remedies when we are sick. My medicine cabinet has no precription medications or over the counter drugs. We have been antibiotic free since I was introduced to homeopathy about 5 years ago. It is really a gift from God.
