- 1 lb chicken, cut in cubes
- 1⁄2 onion, chopped
- 1⁄4 carrot, chopped
- 1⁄4 broccoli, chopped
- 1 (8 ounce) can cream of chicken soup
- 1 cup water
- 2 tablespoons Dijon mustard
- 1⁄8 teaspoon salt
- 1⁄2 teaspoon lemon pepper
- 1 -2 cup white rice
- 1⁄4 cup breadcrumbs
directions
- Cube chicken and season with salt, lemon pepper and cook till golden brown.
- Add can of cream of chicken and water to crock and then cooked chicken.
- Add mustard.
- After 1 hour add vegetables.
- Cook for 2-4 hours.
- Put rice in casserole dish and pour crock pot mixture onto and cover with breadcrumbs.
- Cook on 350-400 till breadcrumbs browned.
