- Melt the shortening in a large skillet.
- Sprinkle the chicken with salt and pepper; brown on both sides in the hot shortening.
- Remove chicken, and place it in a lightly greased shallow 2 quart casserole dish.
- Drain the excess shortening from the skillet and add the carrots, garlic, parsley and thyme.
- Cook over low heart till the carrot is tender.
- Add the carrot mix and remaining ingredients.
- Cover and bake at 350 degrees or until done to your preference.
