  • Melt the shortening in a large skillet.
  • Sprinkle the chicken with salt and pepper; brown on both sides in the hot shortening.
  • Remove chicken, and place it in a lightly greased shallow 2 quart casserole dish.
  • Drain the excess shortening from the skillet and add the carrots, garlic, parsley and thyme.
  • Cook over low heart till the carrot is tender.
  • Add the carrot mix and remaining ingredients.
  • Cover and bake at 350 degrees or until done to your preference.
