French Onion Beef over Garlic Mashed Potatoes

"This is a delicious, fairly simple, belly filling dinner!! It's a hybrid of a few different recipes I have tried. I think you will really enjoy this one."

directions

  • Place roast into crock pot and set on high, salt and pepper to taste.
  • Pour can of French Onion soup over roast.
  • Add Worcestershire, red wine vinegar and hot sauce.
  • Sprinkle packet of onion soup mix on top.
  • Add bouillon cubes into liquid.
  • Cook for 4-5 hours on high.
  • Once beef is cooked through, remove roast, cut into chunks and add back into sauce.
  • Boil potatoes until softened.
  • Mash (with a masher, mixer or ricer) and add garlic, cream cheese and milk to create desired texture.
  • Top potatoes with beef and drizzle with sauce from the pot.
  • Enjoy!

  1. Ohhhh soooo wonderful and the smell! I followed the instructions only I did add a little of the Sriracha and a few portabellos midway and all I and DH can say is ohhhhhh.   2. Oh My! 10 stars from us! Total comfort food on a day that's been windy and stormy. We spent most of the day car shopping for our teen and coming home to the smell of this recipe in the crock pot was Heaven! The only thing I had to alter was the meat, as I couldn't find the right cut at the grocery store so I settled on strip steaks. They basically shredded themselves! Thanks for sharing your creation, LCurt; we'll be making it again. Made & enjoyed for Spring 2011 Pick A Chef. You've been adopted! :)

DH thought nice thick portabella slices would be good added midway through cooking. I subbed sour cream for the cream cheese in the potatoes but the real star was the meat and gravy.
