French Onion Soup Grilled Cheese

"one of Top Chef judge Tom Colicchio's sandwich'es from his Wichcraft restaurant. Add lettuce, spinach or anything else you like but its great plain. caramelizing the onions takes time but worth it. (you can also do a double batch and freeze half for another time)"

  • Over a medium-high flame, heat the oil and add the onions. Cook them slowly (make sure the heat is high enough that they don’t steam) and allow them to gently caramelize, about 30 minutes. Add salt, pepper, and the butter at the end to season.
  • Assemble the sandwich. On a slice of rye, layer cheese, onions, and a second layer of cheese. Cover with the second slice of rye. Place on a panini grill and press. Sandwich is ready when the cheese has melted.

  1. To.Die.For. I shred the Gruyere, because I like it to completely melt. Let the onions caramelize, add a tiny bit of sugar in the last few minutes of cooking, then sort of pile them up in the pan, stick the butter on top of the pile and let it melt down while I get the other stuff ready. Caraway seeds in the bread are essential!
     
  2. Love gruyere, love caramelised onions so really looked forward to making this. Didn't have rye bread on hand so used ciabatta: I love its crunchiness. Thoroughly enjoyed this super sandwich and shall be making it often. Scaled back to two sandwiches for just two of us but used a whole onion. Extra caramelised onion on the side: great! :) Thanks for sharing this recipe, MarraMamba!
     
  3. I loved this grilled cheese! I did have some gruyere cheese that I needed to use so I was happy to have found this recipe. It is wonderful with the rye bread and onion. A great sandwich! Thanks for sharing.
     
  4. Like a previous reviewer, we found it took more onion than called for, and the cheese was indeed expensive. The sandwich is excellent and the ones we made disappeared quickly. We loved the dark rye. Made for Zaar World Tour 5.
     
  5. Well at $15 per pound I'm glad the gruyere cheese was good; I'd never had it before. I'm not sure if my onion was small or what, but I used one onion per sandwich. Wonderful sandwich. I do think it would be better on a milder bread, i.e. sour dough or italian.

I have chronic medication resistant depression after 10 years on anti depressants that worked well but would stop working after a year or two, so now do my best at home living on disabilty. Not a bad thing, many have far worse health issues but i have been able to concentrate on food/cooking. My main passions are my cats. I live in the woods and somehow many starving strays or "dumps" have found the message babies who passed on left in the woods saying "suck lives at xxxx road. Most arrive sick and/or starving. Right now i have 2 that arrived with feline herpes and their attendant 2ndry bacterial infections but are doing beautifully. One old man who was going to be euthanized bc a lady who found him as a stray was moving and didnt want him...well he was a biter and rather grumpy who was in ICU for 3 days with a deadly gut infection which was fixed but he left with a diagnosis of diabetes. 3 months on insulin and finally diet controlled and he caught the herpes virus, respiratory symptom version and turned into a cuddler. Butterscotch must think "why didnt i figure out this cuddle stuff was great before i got sick!" Doing wonderfully even though he has bouts. he and the other kids are my babies. Sadly Butterscotch died of Lymphatic cancer in winter of 2008. A year before Big Boy arrived in my life, starving and weak. Full of affection he jumped into my arms and stayed, turns out he has FIV (cat hiv) so he needs to be watched closely.
