French Potato Salad

"The creator of this recipe named it "French"...I'm not sure who she is anymore (I've had this recipe for a long time) or why, exactly, it's French. It's really good, though, and it keeps well. Enjoy!"

  • Boil the potatoes in their skins until done but not mushy.
  • While the potatoes cook, blend the dressing ingredients in a blender or food processor.
  • Cut the warm potatoes into the dressing, mix well and chill.
  • Before serving, stir in the celery and green onion. Garnish with olives, parsley, and chives.

  1. Wow! If you love potato salad you MUST try this. The way the herbs/garlic/honey combine is the most delectable ever! I made this a day in advance for a dinner with friends. Of course I taste tested and practically swooned.It really does have a "French" taste and belongs in any fine restaurant. I made this to go with Mean Chef's Pulled Pork. This is an incredible recipe, Aunt Cookie, and many thanks for posting it. Note: this is especially good warm. Roxygirl
     
  2. Great tater salad Aunt Cookie! I did make a couple minor changes to the recipe and omitted the honey, I used fresh dill and tarragon and also added in some crumbled bacon, thanks for sharing!...Kitten:)

I wandered onto Recipezaar less than a year ago, looking for a lentil soup recipe. I'm pretty sure I haven't left the computer since then...I've been completely sucked in by this site! Of course, I do take the occasional break to actually cook the recipes I find. When I'm not at my computer or in the kitchen, I'm working toward my PhD in clinical psychology from Kent State. I also work as a therapist at the campus clinic, teach a class (Social Psychology this semester), and work as a research assistant. I'm a little bit busy. I do usually find time every day to cook something for myself with the help of this site, and to exercise (to counteract the effects of the great recipes I find here). I don't have much time in my life for hobbies at the moment (sigh), but I seem to recall that I used to like reading, going to see musical performances, and watching movies. I still do my best to travel as much as possible. My sister, Kate, my boyfriend, Jake, and my friend, Kris, are my favorite travel partners. Kate and I go on an "eatacation" every year.
