French Toast Cups

"Don't throw out that stale bread! This is a recipe that you can use either fresh or stale bread to make. It is a healthy alternative to the traditional French toast. You can substitute the yogurt for low fat ricotta cheese and use whatever fruit your family prefers."

  • Beat eggs, honey, cinnamon and milk together. Place in a flat-bottom dish such as a lasagna pan.
  • Cut the crusts off the bread.
  • Lightly spray muffin tins with oil.
  • Place the bread slices in the egg mixture, flipping it and soaking up the mixture.
  • Gently press the moisten bread into the muffin tins to roughly form a cup shape.
  • Cook in 375'F oven for about 10 to 12 minutes. Remove from oven and add a dallop of greek yogurt, sprinkling of mixed berries and a light drizzle of maple syrup.
