“Unlike most french toast waffle recipes this is not made with bread or pre-made waffles. It is a combination of two recipes from a waffle cook book I have (Waffles: From Morning to Midnight).”

Directions

  1. Preheat your waffle iron.
  2. Melt butter; reserve. In a large bowl whisk together flour, baking powder, cinnamon, sugar, orange zest and salt.
  3. In another bowl whisk together milk, heavy cream, and egg to blend thoroughly. Pour the liquid ingredients over the dry ingredients and mix with the whisk, stopping when the ingredients re just combined. Stir in the melted butter.
  4. Lightly butter or spray the grids of your iron, if needed. Brush or spray the grids again only if subsequent waffles stick.
  5. Spoon out 1/2 cup of batter (or the amount recommended by your waffler's manufacturer) onto the hot iron. Using a metal spatula or wooden spoon, smooth the batter to within 1/4 inch of the edge. Close the lid and bake until browned and crisp. Serve the waffles immediately, or keep them, in a single layer, on a rack in the preheated oven while you make the rest of the batch.
