  • Heat the oil in a large saucepan over medium heat.
  • Add in the onion, carrot, and garlic; cover and cook 5 minutes or until softened.
  • Transfer the cooked vegetables into a 6-quart slow cooker.
  • Add in the cabbage, potato, beans, stock, and thyme; season to taste with salt and pepper.
  • Cover and cook on LOW for 8 hours.
  • Just before serving, stir in the liquid smoke (if using), and parsley; taste to adjust seasonings.

  1. We liked this a lot ! I followed the recipe exactly except for the veggie broth - I used a 32 oz box of chicken broth and two cups of water. All else as posted including the Yukon Gold Potato. I had no problem with the veggies cooking tender at 8 hours on low. I added the liquid smoke and a teaspoon of dried parsley at the end of cooking. I served this soup with a side of fresh corn bread ( Recipe #86019 ) and all was yum-oh and DH a happy eater. Thanks so much for the share.
     
  2. This is really delicious. I had no problem with it getting cooked. The broth I used was hot when I put it in the crockpot, so maybe that helped. I found no need to cook the onion, carrot and garlic before adding them to the pot. Next time I might double the carrots and beans. Anyway, I will definitely make this again.
     
  3. A really enjoyable soup. I did use the liquid smoke and cooked on the stove top instead of the microwave. I also used chicken broth and added a very small amount of browned, ground turkey. Instead of adding salt and pepper, I just sprinkled with lemon pepper seasoning in the bowl right before serving.
     
  4. I like the combination of potatoes, beans and cabbage. I added a ham bone and left out the liquid smoke.
     
  5. I LOVE this. It is the best healthy diet soup ever! I had a few ounces of chopped ham to it for a little extra protein.

Tweaks

  1. Still simmering on stovetop. Smells terrific! Only 1 little tweak: substituted 1/2 tsp smoked paprika for liquid smoke; I might add more.
