  1. Preheat oven to 350 degrees.
  2. Grease an oblong 13-by-9-inch pan.
  3. Combine cooking oil and sugar; blend well.
  4. Beat eggs well.
  5. Add beaten, yogurt and vanilla to oil and sugar mix; bet well.
  6. Sift flour, cinnamon, salt and baking soda together.
  7. Combine wet and dry ingredients; mix well.
  8. Fold in apples and nuts, if using.
  9. Spread batter in baking pan, and cook 500-60 minutes, until toothpick comes out clean.
  10. For Caramel glaze, place butter and sugar in microwave; melt together on high for 1 minute; blend well.
  11. Add cream or evaporated milk to butter-sugar mixture and microwave on high to a full boil for 1 minute.
  12. Add vanilla to glaze mixture.
  13. Spead glaze evenly on warm cake.
