ingredients

  • 1 lb uncooked dry cheese-filled egg tortellini
  • 13 cup olive oil or 1/3 cup vegetable oil
  • 14 cup balsamic vinegar
  • 2 tablespoons chopped fresh basil (or 2 tsp dried basil)
  • 1 tablespoon grated parmesan cheese
  • 18 teaspoon pepper
  • 1 green onion, chopped
  • 1 medium carrot, peeled and sliced on the diagonal

directions

  • Cook tortellini as directed on package.
  • Drain and rinse with cold water.
  • Mix remaining ingredients in a medium bowl.
  • Add tortellini and toss until well combined.
  • Cover and refrigerate at least 2 hours.
  • Toss again before serving with additional parmesan cheese.

  1. Does this recipe have grape tomatoes? Looks like it does in the picture. If so, they are not listed in the ingredients.

  2. Made this as a side dish to go with some grilled salad. We weren't crazy about the carrots, but enjoyed everything else about it. May take another reviewer's suggestion and substitute grape tomatoes for the carrots next time. I took the leftovers for lunch the next day. I just had to freshen it up a little, but it was still delicious.
     
  3. A delightful salad! I added a cup of halved grape tomatoes. I'm not sure I cared for the carrots, so I would just replace with the tomatoes next time.

  5. This recipe was a hit at the BBQ I attended this weekend. I loved how easy it was, and the flavor was great. I was told that this was what I was "allowed" to bring to the next BBQ. I shaved, then roughly chopped, the carrots instead of slicing them just because I think they're easier to eat that way. I also used a bit more cheese and pepper than called for. I used regualr balsamic vinegar this time around, but next time I make it, I'm going to try white balsamic so the dressing won't look quite so dark. Thanks Karen, for a great summertime recipe!

  2. This was a great salad. I didn't use onion, but added chopped green bell pepper, crumbled feta cheese and instead of plain olive oil I used basil flavored oil. I also added butter lettuce leaves. I let it marinate all day and I ate it for dinner last night...it was wonderful! Thanks for a great recipe...
