- 1 1⁄2 cups sugar
- 1⁄4 cup cornstarch, plus
- 2 tablespoons cornstarch
- 1⁄2 teaspoon salt
- 1⁄2 cup cold water
- 1⁄2 cup lemon juice
- 3 egg yolks, well beaten
- 2 tablespoons butter
- 1 1⁄2 cups boiling water
- 1⁄2 lemon, rind of, grated
- 2 -3 drops yellow food coloring
- 9 inches baked pie crusts
- 3 egg whites
- 1⁄4 teaspoon cream of tartar
- 6 tablespoons sugar
directions
- In large saucepan, combine 1 1/2 cups sugar, cornstarch and salt. Gradually blend in cold water and lemon juice. Stir in egg yolks. Add butter and boiling water. Bring to a boil over medium high heat, stirring constantly. Reduce heat to medium and boil 1 minute. Remove from heat, stir in lemon peel and food coloring. Pour into baked pie crust. Top with meringue.
- Meringue - In a large bowl with electric mixer, beat egg whites with cream of tartar until foamy. Gradually add sugar and beat until stiff peaks form.

I made this pie and it was just perfection. I could kiss my husband for planting a Meyer lemon tree just outside my kitchen door. It only took one of those huge babies to make this delicious gem. It was so good that I just printed out the recipe to mail to a friend who is anxious to make it a part of her go-to recipes.

This was a very good lemon pie but I found it just a bit runny BUT that could of been my fault it was just one of those baking days ( my crust cracked and my egg whites would not whip really high UGH LOL) I used two extra white for the meringue since I had them from another recipe. But the pie is gone so that speaks volumes LOL Made for Everyday is a Holiday Tag

I like to sew, crochet and to do crafts. I am a 4-H Club Leader and I have a great group of kids this year. They keep me very busy and I wouldn't have it any other way. We do 3 fairs in the area.
I also like to go to auctions, yard sales and I am always buying items from the kids that they are selling to raise money for school, church or a youth group.
