  • In large saucepan, combine 1 1/2 cups sugar, cornstarch and salt. Gradually blend in cold water and lemon juice. Stir in egg yolks. Add butter and boiling water. Bring to a boil over medium high heat, stirring constantly. Reduce heat to medium and boil 1 minute. Remove from heat, stir in lemon peel and food coloring. Pour into baked pie crust. Top with meringue.
  • Meringue - In a large bowl with electric mixer, beat egg whites with cream of tartar until foamy. Gradually add sugar and beat until stiff peaks form.

  1. I made this pie and it was just perfection. I could kiss my husband for planting a Meyer lemon tree just outside my kitchen door. It only took one of those huge babies to make this delicious gem. It was so good that I just printed out the recipe to mail to a friend who is anxious to make it a part of her go-to recipes.

This was a very good lemon pie but I found it just a bit runny BUT that could of been my fault it was just one of those baking days ( my crust cracked and my egg whites would not whip really high UGH LOL) I used two extra white for the meringue since I had them from another recipe. But the pie is gone so that speaks volumes LOL Made for Everyday is a Holiday Tag

They keep me very busy and I wouldn't have it any other way. We do 3 fairs in the area.
