Fresh Mint and Ginger Lemonade

  • Combine chopped mint, ginger and honey in medium bowl; add boiling water and allow to steep for 30-40 minutes; strain into 4-cup glass measuring cup, pressing on solids to extract liquid; add lemon juice and enough cold water to measure 4 cups total.
  • Fill glasses with ice cubes; add lemonade; garnish with mint leaves and fresh lemon slices.
  • Note: If you like to 'tipple' (I know I do:-)), spike this with some vodka!!!

I really like lemon, honey, ginger and mint so this seemed tailor made for me. I used spearmint in the lemonade it worked great. Made for Culinary Quest - 2014 - Suitcase Gourmets.
     
  2. I reduced the ginger substantially to about 2 1/2 tablespoons. Fresh mint from our garden! The mixture was strained twice to remove any residual ginger peel. Perfect beverage for a 95º+ summer day. Thanks, Ev'! Prepared for CQ 2014.
     
  3. Very good lemonade! This recipe combined 3 ingredients I love: honey, mint and ginger.<br/>This is a summer hit, but I'm sure it will be delicious hot (reheating it!) in winter too.

  5. I really liked this! I'm glad I didn't overdo the lemon juice, because the ginger gave a strong flavor that I liked a lot. Summer ginger ades and ales are just fine with me! I have plenty of garden mint, and it tasted great with this thirst quencher! Ginger is very, very good for your health! I may try to simmer the ginger first, cool it, then add the honey and mint next time!

I moved out here many, many years ago from Ottawa, Canada - so I am blessed in having two wonderful heritages! I suffer from compulsive obsessive behaviour with regard to food and my psychiatrist thought it would be a good idea to find a 'society' where many have the same problem and try to find a cure. So far, I've copied a couple of thousand recipes from this site and my psychiatrist has thrown the towel in and refuses to answer the phone when I call. What did I do wrong? Got 3 kids that keep me on the go - 10 and under at this point (2008) - I may not get round to updating this for a few years, so you'll have to do your own maths. I teach English full-time and Greek Cookery part-time. I would like to make the cooking part of it full-time and the English Grammar part of it part-time. That's all for now.
