Salad
- 1 heart romaine lettuce, coarsely chopped
- 2 large clementines, peeled and divided into section
- 1 (199 ml) can bamboo shoots, drained

Dressing
- 1⁄4 cup fennel bulb, coarsely chopped
- 2 tablespoons onions, coarsely chopped
- 1 garlic clove, coarsely chopped
- 1⁄2 teaspoon salt
- 2 tablespoons white vinegar
- 1⁄4 cup olive oil
directions
- Place Salad ingredients in large salad bowl. If the clementine sections are large you may wish to cup them in half.
- Place fennel, onion, and garlic in food processor or blender and blend until an even puree. Add Salt and Vinegar and combine. Slowly stream olive oil in until mixture is emulsified.
