  1. In a small saucepan, combine raisins, jalapeno, shallot, ginger, cumin, vinegar and orange juice.
  2. Cook over medium heat for 2-3 minutes, stirring constantly.
  3. Add brown sugar and peaches.
  4. Cook for 5 minutes, stirring occasionally, until thick and bubbly.
  5. Remove from heat and cool.
  6. Serving size is 2 T per sandwich.
