Fresh Plum or Peach Cobbler Muffins

"This is an variation on a recipe found in The Muffin Lady cookbook. I used plums, because that's what I had, but peaches would be delicious, too. She says to use unripe fruit, as it will ripen up and get sweet during cooking. Also, use sliced fruit rather than chopped, because chopped will tend to "get lost" during baking. These muffins are like a hand held fruit cobbler. So good!"

directions

  • Heat oven to 350 degrees.
  • Peel and slice fruit into 6 slices each.
  • Sift the dry ingredients, making a well in the center.
  • Pour wet ingredients into the well, and blend by hand.
  • (Batter will be thicker than regular muffin batter.) Scoop batter into lightly greased, large 6 muffin pan.
  • Insert 2 plum or peach wedges into each muffin.
  • (They will be sticking out over the batter. This is ok) Sprinkle muffin tops with cinnamon.

  • Cool 5 minutes in pan, then turn out on rack to cool.

  1. First attempt with peaches was an outstanding success. I prefered to chunk my peaches and made 15 smaller muffins. With the smaller muffins I needed to reduce baking time by 5 minutes. Thanks for a tasty recipe.

  2. These muffins came out very tasty. I did chop up the fruit and mixed it in, and I had no problems with the fruit sinking. Great recipe, thanks!

  3. I had some plums that really need to be eaten, so I chopped three up and added to this batter. Very good!

  4. These were really good...I used frozen peaches. I took then right from the freezer and placed 2 per muffin as I made 12 instead of 6. I would reccomend chopping up a few and mixing in with the batter so that you get an all around peach experience! Will make again!

  5. I made 12 regular muffins instead of the 6 large. I did as the recipe said and inserted peach slices in the top and dusted them with cinnamon. These turned out just right and the taste is that of a peach cobbler. I will definitely will bake these again.
