Fresh Raspberry Scones

"This is my son's recipe (Jon). He made it in his Foods and Nutrition class in High School. So... as soon as he came home from school that day he said" Mom, do we have flour, cream, sugar, baking powder, salt and butter" I said uummm yeah, and he went to town in the kitchen making these. They were so good and when they were done YYuuummmmm...they looked quite easy to make."

  • Preheat oven to 400 degrees F.
  • Mix flour, sugar, baking powder and salt.
  • Pour in cream and *(Berries or chocolate chips if using), and mix gently until dough just comes together.
  • Turn out onto lightly floured board and pat into a 10 X 1 1/2 inch round.
  • Cut into 8 triangles, brush with the melted butter and sprinkle with sugar.
  • Place 1" apart on parchment lined baking sheet.
  • Bake for aprox. 12 minutes or until lightly browned on top.
  • * if berries are really juicy, put a little less cream in the recipe.

  1. I love this recipe! I have made it with raspberries, blackberries, and blueberries. It’s been delicious every time. I do usually put about 1 cup of fruit because I like the higher ratio. I have also found I don’t like to use fresh blackberries because they are quite juicy and make the dough sticky when you mix them in, so I tend to use frozen. I have also used this recipe camping and backpacking. I mix the dry ingredients beforehand in a gallon ziplock bag. I use shelf stable cream and usually blueberries (they travel reasonably well). I mix it in the bag then cook in a Dutch oven. So good and easy!
     
  2. YUM!! These were very good and super easy to make, I used about 1 cup of blackberries. I cut into 8 pieces as recommeded, but next time I will make them a little smaller. Thanks for sharing!
     
  3. These scones are SUPER easy and taste great too. Made them with fresh rasberries (used one small container) and it was perfect. Plan to drizzle them with dark chocolate ganache next time.
     
  4. I made these with blackberries fresh from my bush. Dear Allan was in heaven! He hasn't had scones in forever and with the fresh berries from home they were awesome!! Next time I will add some white chocolate chips like NikkiCollegeGirl suggested.
     
  5. mmmmm good!!! EXACTLY what I was looking for! I used 1/2 cup raspberries AND 1/2 cup white chocolate chips in the same recipe. DELICIOUS AND EASY!!! I've already made these 3 times since finding the recipe and will continue to make them. Thanks for a great, fast, easy recipe!!!

<p>I live in Northern California in the town of Placerville. It's a one hour drive East to Lake Tahoe or one hour West to our State Capitol, Sacramento. Great location. <br /> I have been overdue for an update!!! 1/10 <br /> My Boy's are doing well. Nick is still in Australia and Jon is still here at home. They both graduated high school last year. I hope NIck will come to the US for college, Cal Poly, San Luis Obispo!!! (we'll see) He may stay down under for college :( <br />Jon is working and figuring out life....he plans on being an entrepreneur im sure. <br />We have two dogs, Jewel and Bob both adopted from the local shelter.
