Fresh Roasted Tomato Sauce

"I was standing in the grocery listening to this woman talking about how she roasts her tomatoes before making them into sauce. I thought that was a great idea so I tried it. It was so easy and I was able to sneak a few extra veggies into it for the kids. I used half Romas and half Better Boys. For thicker sauce use all Romas."

  • Put tomatoes, cut side up on cookie sheet, sprinkling with pepper, garlic, Italian seasoning and kosher salt.
  • Bake at 350F for 45 minutes.
  • Place celery, onion, carrots, sugar and olive oil in food processor.
  • Process until smooth.
  • Add tomatoes and process until mixture is well blended.

  1. This was very easy to prepare, however, the taste and texture was like that of a good homemade tomato soup...nothing like a sauce. It was a disappointment! Imagine serving your pasta with a large ladle of tomato soup and you will have the idea!
     
  2. Very versatile sauce that works well on its own or as a foundation for other dishes. I love the special flavor that comes about when tomatoes are roasted. In my own sauce, I decided to complement that flavor by also roasting about 6 cloves of garlic (the flavor mellows considerably so this is not the same as 6 raw cloves). Next time I would roast the other vegetables as well so the roasted flavor would serve as a unifying flavor through the sauce. I used this as a side sauce to a frittata at one meal, on pasta in another and as the base for an arrabiatta-style sauce with olives and artichoke hearts in yet another. Thanks.
     
  3. I really loved this unique sauce. My DD's weren't too sure about it, but I really liked it. It has a strong garlic flavor that I loved and a slightly sweet taste that was nice. It's different than any tomato sauce I've had before, but I always love finding recipes that taste different than the usual while still being good. Made for Zaar Tag.

I have two boys who will usually eat most things I put in front of them. As a single mom I use them as my guinea pigs....sometimes it works, sometimes it doesn't.
