- 1 habanero pepper, seeded and minced
- 1 small cucumber, peeled and diced
- 4 large plum tomatoes, chopped
- 1 cup finely chopped fresh cilantro
- 2 tablespoons vinegar
- 2 tablespoons olive oil
- 1 teaspoon sugar
- 1 teaspoon ground cumin
- 1⁄2 teaspoon salt
- tortilla chips
directions
- Stir together first 9 ingredients in a medium bowl. Cover and chill at least 1 hour.
- Serve with tortilla chips.

This...is...amazing....salsa! Sorry for the breathlessness, but I've just finished tasting this and am very excited! The perfect combination of ingredients here. I can't get a habanero here, just used the local Middle Eastern hot peppers, which are really popping! I love addition of the cumin, it really makes this unique, and the sugar gives it just enough sweetness to tame the heat. We're going to have these tonight with toasted pita wedges drizzled with olive oil. Thanks, I think I'm in love already!
