  1. Peel sweet potatoes, then boil them whole; drain water.
  2. Mash potatoes with butter.
  3. Add eggs and milk. Combine sugar with cornstarch; add to potato mixture. Finally, add vanilla and lemon flavoring.
  4. Pour into pie shells.
  5. Bake at 350 degrees until nice and firm. This depends on your oven. Mine takes about 40-45 minutes.
  6. Makes 3 pies.
