directions

  • Process tomatoes until smooth in a food processor.
  • Heat the butter, add onions, garlic and ginger and cook, stirring until the onions are soft.
  • Add flour, stir until combined.
  • Remove from heat, gradually stir in the tomatoes, stock, tomato paste and sugar, simmer uncovered for 15 minutes or until slightly thickened, stir in herbs.
  • For the Parmesan toast, combine butter and cheese, spread over the bread.
  • Grill until melted.
  • Serve soup with Parmesan toast.

  2. Very good! Perfect for using up some tomatoes a friend gave me. I adjusted the sugar/salt/pepper to my taste. And also, used fresh basil instead of tarragon. Mmmmm great served with a sprinkle of parmesan!
     
  3. What good soup! An excellent combination of herbs and the touch of ginger is lovely. It's very good as written and very good with the addition of milk/cream for a 'cream of tomato' soup version. It's also nice garnished with a swirl of creme fraiche.

I live at the Coast and have done so for the last 5 years,its certainly a slower pace of life here than when we lived in the city. There is something very restful about living so close to the Sea even the storms are spectacular to watch.One of My wishes is to spend a weekend in a Light house,preferably in rough weather! I,m also *Mum* to 4 dogs(all girls!)Millie the boxer,Jessie the cross border collie who is slightly mad to say the least!and my 2 little Jack Russells Molly and Mandy who have me running about all over the place I wish I had their energy!I,de bottle it and make a fortune!
