  • Peeling tomatoes: Drop tomatoes into a pot of boiling water for 1-2 minutes. Take them out of the pot and immediately drop into ice water. After they're cooled a bit you will be able to peel the skin off with the help of a paring knife.
  • Place chopped tomatoes in a colander, sprinkle with salt, and let drain for 30 minutes.
  • Heat oil in a medium sauté pan. Sauté onion in oil for 5 minutes. Add garlic and red pepper flake for last minute. Add tomatoes, basil, salt, pepper and sugar. Allow to simmer slowly for 30 minutes. Add parsley at the end. Adjust seasonings to your taste.

Outstanding tomato sauce My family, friends and neighbors always keep me supplied with homegrown vegetables and I can’t use all the tomatoes so I decided to try this recipe for tomato sauce and freeze what I couldn’t use. It’s just wonderful and freezes perfectly in a Zipper Top freezer bag. I double bag to make sure the sauce is fresh for a long time. Thanks for this excellent recipe.
     
  2. My only regret in making this recipe is that homegrown tomatoes are not out yet. But it was so good with just the store bought Romas that I can just imagine how great it will be this summer when I make it again and I surely will. Thanks so much for sharing this super recipe. We really enjoyed it.
     
  3. This recipe is excellent. We used fresh tomatoes (not roma tomatoes). It has a delightful taste. Easy to make too.
     
  4. The recipe turned out ok. I added a little tomato paste otherwise it would've been to watery for pasta.

Very busy nanny/au pair, working for a very rich and snooty family, in a very large home, in a very snooty village. Just in case my employer comes here, please don't ask where I am from, or I'll be sacked like the last nanny was. ;-) I take care of 4 gorgeous, and darling kids. 3 girls and a boy. The boy is the youngest (and my favorite). They are great children, very, very active. (Hyper) I love to cook. I guess that's a given, why else would I be here. Part of my job is also to prepare meals for the family. The more they like my food, the longer I get to stay. (just a little joke) On my day off, I usually go out to the cinema or some dance clubs with the other au pairs in this town. That's about it I think.
