Fresh Vegetable Salad

"I have taken this to so many potlucks, cook-outs, and family to-dos. Always a favorite. I usually make it in the morning and let marinate for 8 hours. Then it is ready for the evening meal."

  • Mix together the first 6 ingredients in a large serving bowl.
  • In a krudit jar, add the olive oil, parsley, vinegar, salt, ground mustard, pepper, and garlic.
  • Put on tight fitting lid; shake vigorously to combine ingredients.
  • Pour over salad and toss to coat.
  • Cover and refrigerate for at least 2 hours and up to 8 hours.
  • Serve with a slotted spoon.
  • Add salt and pepper to taste.

  1. This is the salad I served for our Christmas Eve dinner. Very easy. I made it eary that morning and let it marinate all day. The dressing had a wonderful tangy, zesty flavor. A crowd pleaser as there was none left. Thanks Nurse Di.
     
  2. This was a wonderful salad. I increased the white wine vinegar to 1/2 cup because I like the zestiness it adds to the flavor. Had a fresh zippy-zing to it. This would be good for any occasion and will be used alot here. Thanks.
     
  3. I needed a good and easy salad recipe to serve for my Dad's birthday dinner, so I tried this one. Wonderful fresh brisk flavored dressing. I let the salad marinate for 4 hours and that gave the vegetables plenty of flavor. I added some chopped broccoli and mushrooms into the mix. Very versatile. Thanks.
     
  4. This is a wonderful salad. I made it in the morning and let it marinate all day. The dressing was wonderful and the salad had such a fresh flavor. I added orange bell pepper. I cannot wait to make this again.
     
  5. Very good. Made an eye catching salad. The only change I made was to double the garlic. Next time I might try using apple cider vinegar instead, broccoli instead of ( or maybe in addition to!) cauliflower and add even more garlic. Thanks for a new recipe!

  1. This salad is great, I used broccoli instead of cauliflower and forgot the mustard. Still turned out very good. Can't wait til we have fresh garden veggies this summmer,thanks for posting!
