  • Toss everything together. Drop by tablespoonfuls, 4" apart, onto a Silpat-lined baking sheet. Stir after each tablespoon, to keep flour evenly distributed. Spread each spoonful out to a 3-4" diameter circle. Bake in a preheated 375°F oven for about 10 minutes until bubbly. Let cool a minute or two, then transfer very carefully to a rack to cool. You can also drape them over the bottom of a teacup to form a small bowl. Store in an airtight container, separated by layers of waxed paper, at room temperature, up to 3 days.

  1. These cheesy disks give a salad that extra special touch that just takes minutes to make up. I make mine a bit different where I add a pinch of pepper to each disk. Try them with Asiago cheese for a different taste

I'm a 48 y/o gay Jewish man in the suburbs immediately north of New York City. I'm a general internist, practicing and teaching at a medical college north of NYC. I also earned a Masters in Public Health degree in 2013. After a Walt Disney World trip in Dec 2006 where I had to rent an electric scooter because I couldn't manage the walking, I decided to have gastric bypass surgery, which was done Feb 28, 2007. I lost 160 lbs (though I've gained back about 60 of that since). I can't eat as much as I used to, so I want every bite to be extra good!
