- 1 cup coarsely grated parmesan cheese, grated on the large holes of a box grater
- 1⁄8 teaspoon ground black pepper
- 1 tablespoon flour

- Toss everything together. Drop by tablespoonfuls, 4" apart, onto a Silpat-lined baking sheet. Stir after each tablespoon, to keep flour evenly distributed. Spread each spoonful out to a 3-4" diameter circle. Bake in a preheated 375°F oven for about 10 minutes until bubbly. Let cool a minute or two, then transfer very carefully to a rack to cool. You can also drape them over the bottom of a teacup to form a small bowl. Store in an airtight container, separated by layers of waxed paper, at room temperature, up to 3 days.

After a Walt Disney World trip in Dec 2006 where I had to rent an electric scooter because I couldn't manage the walking, I decided to have gastric bypass surgery, which was done Feb 28, 2007. I lost 160 lbs (though I've gained back about 60 of that since). I can't eat as much as I used to, so I want every bite to be extra good!
