Fried Beets

"I was helping make supper at my sisters and I was in charge of cooking the beets. Years ago I had tried every way to cook beet so I'd like them, didn't work. I wasn't really concerned if the beets turned out OK, because I wasn't going to eat them, so I went for simple. Well when I was stirring them one escaped the pan, picked it up no place to put it, popped it in my mouth. DEEEEE LISH US."

  • Melt butter in non-stick frying pan.
  • Add butter, onions, salt and pepper.
  • Fry on med-low heat until onions are translucent because beets are already cooked.
  • NOTE: To cook beets, trim them leaving approximately 1 1/2 inch stem. Place in large pot with enough cold water to cover, add 1/2 tsp salt. Bring to a boil, then lower heat and simmer until tender. Cooking time depends on how large the beets are. Drain, wearing rubber kitchen gloves, remove skin. Cool. Slice for above recipe.

Jorgydee, I can not thank you enough for this great and very healthy recipe for beets.<br/>Us, too, as much as we would like to include more beets in our diets, we could not eat them<br/>too often because they did not taste really too great. UNTIL...I came cross your "fried beets" recipe on Foods.com. We had them tonite as side dish and my husband and I, just adored it.<br/>We have enough left for tomorrow, I am sure they will taste just fine.<br/>The only thing different I made is I steam cooked my beets, they were small size so they did <br/>not take too long to cook them this way. I followed otherwise the recipe .<br/>I will make often the "fried beets" and thanks again for sharing it with us.<br/>Santi

Hi. I live in Saskatchewan Canada in a town, population 17,000. I have lived here about 26 years. I work in a dentists office as a Dental Hygienist. I have 4 children, all girls, ages 43, 39, 33, 25 plus 2 granddaughter, 21 and 15 and 1 grandson age 10 and 1 great granddaughter age 1. When I was growing up I learned to cook from my mom and I still love to cook. My sister has made two cookbooks and I helped her with the last one. My favorite cookbook are like the ones my sister did, the family favorites and community organization cookbooks.</p>
