  • Combine corn, lightly beaten egg yolks, flour, sugar, salt and pepper in a large bowl.
  • Beat egg whites with an electric mixer set at high speed until stiff peaks form, about 2 minutes.
  • Stir egg whites into corn mixture. Heat oil in a large skillet over medium-high heat.
  • Drop heaping tablespoonfuls of corn batter into skillet. Reduce heat to medium. Cook until nuggets are browned, about 3 minutes per side.

  1. not crazy about this at all. of course, I AM so used to having the sweet corn nuggets that are generally served at any Texas BBQ, these are completely different, and very light and puffy. its not that they are BAD, just not what I had expected.

  3. 10 STARS !! Made for Ash Wednesday dinner side. The sour cream on top was perfect. I used peanut oil instead because I had it on hand.
     
  4. Geez these are good! Yummm! Easy to put together, quick to fry up, and then they disappear if you turn your back for 2 seconds! They're a major hit in this house already. Made for PAC Spring 09.

I am a Type 1 diabetic with an awesome husband and kitty. My diabetes was very sudden but I have learned a lot about it in the last year and I am managing it pretty well with my latest A1c at 6.8%. I have always loved to cook and enjoy looking for new recipes to spice things up some. My husband hates having the same dish twice in one month, so I face many challenges to come up with new things. I also enjoy quilting and journaling.
