Directions

  1. Combine the first 3 ingredients in a small bowl, stir well.
  2. Dip the tomato slices in the beaten egg.
  3. Dredge in the corn meal mixture, coating well on both sides.
  4. Heat 2 tablespoons of oil in a large skillet over medium-high heat until hot.
  5. Add 1 layer of coated tomato slices and fry 3 to 5 minutes or until brown, turning only once.
  6. Remove from skillet, drain and set aside; keep warm.
  7. Repeat the procedures until all tomatoes are done, adding more oil with each new batch serve immediately.
