These are a great breakfast instead of fried potatoes. I made 1/2 of a plantain following this recipe, and the other 1/2 without the salt but sprinkling with sugar before removing from the pan (to see which recipe I liked better). I actually really liked both. This one is better as a breakfast or side dish in place of potatoes or rice. The other would make a great dessert or sweet snack. Great either way!
